How is everyone liking these? We loved them and I was pleasantly surprised at how moist they turned out.
Many Food Network reviewers said that they thought these seemed more like muffins than cupcakes. I think they can go either way, and I opted to not make the frosting and treat them more as a muffin.

They are sitting on my counter and waiting to be frosted. I didn't read any reviews, but I am going to frost them. They smelled so good while baking, though!
ReplyDeletei made these and posted about them a while ago, they were delicious! i reduced the amount of sugar in the frosting and it was still plenty sweet enough for me. my post is at http://edibleventures.blogspot.com/2009/06/carrot-cupcakes-with-lemony-cream.html
ReplyDeleteHi everyone! I'm sorry I won't be participating again this week. I just made something almost identical last month, and think I'd like to keep diversifying my portfolio :) Enjoy, though, they look yummy!
ReplyDeleteThese look great, but I have to sit this one out (I know -- again!). Sorry about that. I'll rejoin you with the Turkey Burgers next week.
ReplyDeleteI thought these were great. I agree that they could go either way in the cupcake/muffin debate, but I did make the frosting. I have it in a small container in the fridge and I'm going to frost them as they are eaten because I didn't have room for a whole container of frosted cupcakes.
ReplyDeletewell, I made mine go an even different way: cookies! Take a look if you'd like:

I followed the directions for the muffins but I made three differentkinds of little cakes. I wish I could each of you a sample of each to see which worked the best.
ReplyDeleteI have some additional pictures from Comfy Cook at Sweet and Savory. Drop by there. It is a brand new website and I would love to have some of you visit.
