Hi! I just found your site, after purchasing Ellie's new cookbook. (I love Ellie!) I've made the Carrot, Green Apple and Mint salad a few times. It's very fresh and delicious. I even took it to a work potluck, and people loved it. It has a very pretty presentation and the flavors blend together really well.
I agree with KS. I've made this before too and surprisingly loved it. I'll be making it again later today for this weeks pick. You should give it a try, even just make half of the recipe.
I haven't made it before, but I decided to chose it because I thought it'd be a nice, seasonal side dish. My hope is that it will be sort of like a Waldorf salad. But, many of those near and dear to me can't stomach the though of fruit anywhere near their salads, or their dinner, so I understand the aversion.I'm glad to hear that it's yummy. I think I'm going to try to make this with dinner tomorrow night.
Unfortunately I am going to have to sit out this week, but I look forward to seeing how it turns out for everyone.
I'm definitely scared of this one. We'll see what happens... I may do last week's recipe since I had to skip it. :)
My kitchen is currently under construction so I will be sitting out for a few weeks. Hopefully I will be back in the swing of cooking by Thanksgiving (keep your fingers crossed for me!). Happy cooking y'all!
