Finally back at it!! Made this tonight, was absolutely delicious and sooooo easy to make! I used spinach instead of arugula and added some yellow pepper.
I haven't made this pizza in a few months, but I can tell you that we love it. I love the flavors of the sweetness from the carmelized onions, the tartness of the cheese and the pepperiness (is that a word?) of the arugula. I usually make it on a prepared ww pizza or homemade ww pizza crust, however. I have substituted spinach for the arugula at times. Try tossing on some toasted, chopped walnuts. Yum!
I HATE onions, so I think I'm skipping this one. Not enough other ingredients to make it stand out. I could I suppose just make pizza with other toppings but that probably isn't the point of this, huh? Sorry :(
Looking forward to getting back into Ellie after a long hiatus. What a great recipe to start back with. I have some left over ciabbata from Trader Joe's so I think thats going to win over the wheat tortilla :)

ReplyDeleteI really liked it. I did use pizza dough instead of wheat tortillas. Add in some balsamic chicken and it was a great dinner!
