Made this last week and loved it! I would recommend topping each bowl with a dollop of sour cream. Also, I stirred in some crushed peanuts just before serving, which added a nice texture. Using crunchy peanut butter instead of creamy would also accomplish the same thing.
I'm so sorry I missed this one. I've just gotten out of the blogging habit lately. I'm going to the store today, and I'll make sure I get the ingredients for the next few weeks so I can jump back in!
