Made this last week and loved it! I would recommend topping each bowl with a dollop of sour cream. Also, I stirred in some crushed peanuts just before serving, which added a nice texture. Using crunchy peanut butter instead of creamy would also accomplish the same thing.
I haven't participated in MONTHS, but I'm back this week! Really liked this soup.
