I'm making mine today! I'm actually about to go out to the store to get greek style yogurt. I'm using shrimp on mine, luckily it was on sale this week! I'm pretty excited about this, I've never had a lobster/shrimp roll before and I love seafood. I'm going to skip the celery since I'm not a fan, especially when its raw.
Every party needs a pooper, and that's why you invited me! I am skipping this week too, but thinking of doing a rewind...maybe the steak tacos with cucumber-avocado salsa. Sorry guys!
I made these last night, and we weren't really impressed. Then again, neither of us are mayo fans nor do we like chicken salad, potato salad, etc. It's not something I would make again though I thought it was OK. A little bland so for the few people who are making this, you might want to think about adding some more salt/pepper or some other spices.
Just made this tonight and it was good. I agree with thenotsoskinnykitchen that it's a little bland and could use something else, but I couldn't think of what to add. I would probably try it again with a little chopped parsley on top? The dressing was good.. real creamy. I liked how the lemon brightened it up and definitely wouldn't leave out the scallions or celery (flavor and crunch).
I would make this again, but try different seasonings. I wonder how a cajun type of seasoning would go with cabbage instead of celery?
Since I'm allergic to shellfish, I'm thinking of trying it with tuna (but then it's basically a tuna salad sandwich) or chicken (ditto--chicken salad). Any suggestions?
Not sure if you like curry, but maybe substitute the shrimp with boiled cubed chicken and toss the dressing with a tsp. of currey powder. I would also top with some parsley or something.
I'm not a curry fan (for colder food) or else I would try it.
If you are using shrimp, consider Old Bay seasoning. I also halved the amount of yogurt and mayo, only because it's a thing up here to make lobster rolls with as little mayo as possible. I upped the amount of lemon juice and S&P, and this was good. I also left out the celery and scallions because my boyfriend said that it made the lobster roll much more "illegitimate," but I think they'd be good anyways.
I made the shrimp rolls last night and thought they turned out okay. I had the seafood guy steam the shrimp with lots of Old Bay seasoning and that really gave the shrimp some flavor. Plus, I added fresh dill, cilantro and garlic to the mix for extra flavor. I really think that the only cold "meat" salad that i like is chicken salad!
Everyone really enjoyed this when we served it at the beach last fall. We did a shrimp boil the night before with old bay seasoning and then turned the leftover shrimp into this recipe.
