These were quite tasty. I made them last night for dinner with some other appetizer type things. Perfect for eating while watching the Redskins lose per usual.
I was really looking forward to trying these, but I have the flu and don't foresee any cooking in my near future. Can't wait to see how it turns out for everyone!
I am excited for these! My boyfriend and I love potato skins and broccoli cheddar soup so hopefully we'll love the combination. I'm planing on making these tomorrow if I can get to the grocery store.
i apologize to anyone who has gone to my blog looking for the Broccoli and Cheddar Stuffed Potato Skins. Everything that could go wrong did go wrong ... including not being able to find avocados that were riper than rocks and having our internet service provider going out for the last several days (a far-too-common problem here in the jungle). Anyway, I promise that this recipe is coming just as soon as I can find an avocado that I can cut into.
