And last, on the gazpacho, I made it and my advice is to adopt a "more is less" mentality with the almonds...mine was more like a flovored almond puree than a gapzacho and I used the amount the recipe called for. Just thought I would share...
I made this and it was great! We doubled the garlic and it was very garlicy, but we liked it that way. Maybe the flavor of the garlic covered up the almond flavor, but I didn't notice the almond flavor being too much. I expected not to like this one but Ellie tricked me again!
I am gonna have to sit out again for this one. The husband HATES cucumbers, and I really don't see a way around them in this recipe. I would have an all out revolt at my house if I made this recipe. I am looking forward to making the double chocolate pie, though!
I made this a couple of weeks ago and it was an all around success. I used some fancy aged champagne vinegar and I think that might be one reason why mine was very, very vinegary and garlic-y. The grapes offered a great contrast, though and I can't wait to make it again.
So excited to be making my first Ellie recipe. I was wondering if anyone made it ahead and refrigerated it, and if so, how it held up? If I do, it'll only be for a few hours. Happy gazpacho-ing!
I think I will definitely be sitting this recipe out again this week. Work has been too hectic to even think about cooking. Plus, cucumbers are not my favorite. I did find some fabulous mulberries at the farmers market this weekend. Delish!
I am so sorry to do this, but I am going to have to sit this week out (again). I'm really skeptical about gazpacho in general but was willing to try it; unfortunately Ryan isn't open to trying it, and I just don't have the time to make it for myself this week like I've done in the past when it was a recipe he wouldn't eat. He hates soup and veggies so this was a no-go. I am really excited to see how everyone's turns out; maybe I'll be inspired to make it later :)
In case anyone else has the same question I did about refrigeration, I tried it and think it's actually better after chilling for a few hours. Either way, it's delicious!
